Loïc à fait l'école hôtelière de Vannes en 1989, il a ensuite travaillé comme cuisinier, serveur et bartender à Paris, Londre, Los Angeles, New York. Il est établit à Boston depuis 1999.

Il a ouvert le premier Petit Robert en 2005 a Kenmore Square puis 4 locations en 5 ans.

Créé et ouvert Frenchie Bistro en 2017 puis Colette Bistro a Cambridge en 2019.
