Au début des années 1760, quelques commerçants parisiens ont une idée de génie : servir aux personnes de santé fragile des bouillons " qui restaurent ", à base de viande et de légumes, non plus sur une table d'hôte et à heures fixes, comme il était d'usage dans les auberges et les tavernes, mais sur des tables individuelles, à toute heure du jour, avec un choix de plats à prix fixes. Ainsi naissent les " restaurants ", un des mots français les plus répandus dans le monde et paradoxalement une des inventions les plus méconnues de notre histoire. Une invention qui, depuis les premiers établissements du Palais-Royal jusqu'aux brasseries montparnassiennes de l'âge d'or ou aux grands rendez-vous des Champs-Elysées, a pourtant connu un destin exceptionnel : antichambre du plaisir, laboratoire du goût, microcosme social... Le journaliste François-Régis Gaudry raconte avec érudition et humour l'étonnante " révolution " provoquée par cette nouvelle façon de " manger dehors ". Fourmillant d'anecdotes politiques, littéraires et gastronomiques, cet ouvrage passionnant retrace également une étonnante histoire de moeurs, de mode et de cuisine.
